Pesto Pasta

Last week I bought some chicken cutlets during our big shopping trip and was wondering what to do with it. I always keep a few packages of Knorr Sauces on had in case I need them, so I boiled some Barilla  Gemelli pasta and started making the pesto sauce. The recipe calls for some water and olive oil, so I used the water from the pasta.

I sauteed some garlic, onion and olive oil and cooked the chicken. I sliced the cutlets into strips. I added the chicken, then added the pasta to the pesto.

Since we had tacos a few days before, I remembered that I had some onion and tomato left over, so I diced them and added them as well. I left the pasta over low heat and kept stirring to let all the flavors mix. Yummy! This dish is definitely good hot or cold!
